This month, as we spotlight our frozen mamey sapote, we invite you to try out three delightful recipes: the classic Mamey Sapote Cheesecake, a light and airy Mamey Mousse, and the innovative Mamey Spiced Chicken. 
Mamey Sapote Cheesecake
Indulge in the creamy delight of our Mamey Sapote Cheesecake. This dessert blends the earthy sweetness of mamey with the richness of cream cheese for a decadent treat.
Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup melted butter
  • 3 cups mamey sapote pulp, pureed
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
Instructions:
  1. Preheat your oven to 350°F. Mix graham cracker crumbs, sugar, and butter; press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  2. Beat cream cheese until smooth, add sugar, then eggs one at a time, followed by vanilla and sour cream. Fold in mamey puree.
  3. Pour filling over crust, reduce oven to 325°F, and bake for 50-60 minutes. Let cool, then refrigerate overnight.
 
Mamey Mousse
Light and fluffy, this mousse is perfect as an after-dinner treat or a sweet midday snack.
Ingredients:
  • 2 cups mamey sapote pulp
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • Gelatin (optional for firmer texture)
Instructions:
  1. Whip heavy cream with sugar and vanilla until stiff peaks form.
  2. Puree mamey pulp until smooth, fold into whipped cream.
  3. Spoon into serving dishes and chill for at least an hour before serving.
 
Mamey Spiced Chicken
This savory dish uses mamey sapote in a surprising way, adding a sweet depth to the spicy and aromatic seasoning.
Ingredients:
  • 1 cup mamey sapote, cubed
  • 1/4 cup dry white wine
  • 1/4 cup water
  • 1 tablespoon Pernod
  • 1/4 teaspoon ground cinnamon
  • Pinch each of ground cloves and freshly ground nutmeg
  • Four 6oz chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 sprigs fresh mint
Instructions:
  1. Blend mamey, wine, water, Pernod, and spices until smooth.
  2. Season chicken with salt and pepper. In a skillet, heat oil and brown chicken with garlic.
  3. Pour the mamey sauce over the chicken, cover, and simmer until cooked. Serve garnished with fresh mint.
