Pulled Jakfruit


  • 1 medium green (unripe) jackfruit, peeled, deseeded and roughly chopped
  • 3 red onions
  • 2 tbls olive oil
  • 2 tbls minced garlic
  • 2 tbls crushed ginger
  • 1/3 cup smoked paprika
  • 4 tomatoes, roughly chopped


Roughly chop and saute the red onions over a medium heat till soft. Add the ginger, garlic and paprika. Cook for a minute. Add the jackfruit and enough water to cover. Cover the pan with a tight fitting lid or foil and simmer for 4 hours. Check occasionally to make sure there is enough liquid to stop the jackfruit burning. Once the jackfruit has cooked down and fallen apart remove the cover and simmer till the excess liquid is cooked off. Add the chopped tomatoes and cook for another 15 minutes. Season with salt and pepper to taste.
