Base:
Crush buscuits to fine crumbs, mix in macadamia nutsand butter and press into pie or flan dish.
Filling:
Put all ingredients into a mixer and cream.Dissolve gelatine in about 70mls hot water, cool and gradually add to the mixture. Beat ingredients until light and fluffy. Pour over the biscuit base and place in refrigerator overnight. The flavour improves as Lemon Myrtle infuses through the filling - this recipe is best made 1-2 days ahead.
